Oven Roasted Baby Potatoes

For this simple side dish, you can use either yukon gold or baby red potatoes. Toss them in a large bowl with simple ingredients like olive oil, melted butter, sea salt, black pepper, minced garlic, and fresh herbs, like fresh rosemary or thyme.

Place them in a baking dish and roast in the oven for 45 minutes at 350 degrees F, flipping at the 20 minute mark to promote even browning. Whenever they become fork tender is when you will know they’re done.

Plenty of chefs serve these mini roasted baby potatoes with parmesan cheese or turn them into crispy smashed potatoes with a fork, and they’re the perfect accompaniment to roast chicken and green beans.

Foil Baked Garlic Buttery Baby Potatoes

In this simple recipe, yukon gold spuds deliver the best results, but really any kind of regular potatoes cut into pieces will suffice.

Using aluminum foil, shape out a bowl and fill with a handful of baby or fingerling potatoes and toss with about 4 tablespoons of olive oil to prevent sticking, salt, and pepper.

Add in a blend of herbs and a few minced cloves of fresh garlic; it makes for the most mouthwatering garlic butter in the world.

Working with small potatoes often is key, and the sealed foil bowl of potatoes can be thrown onto a barbecue grill until golden brown or cooked in the oven at the high temperature of 425 degrees F with a cooking time of 25-30 minutes. Serve as a tasty side dish to a steak dinner.

Baby Baked French Fries

Typically, the french fry is made using larger potatoes, such as russet potatoes, but for this simple recipe, I utilize the mighty baby potato… and cut potatoes differently as well.

Nonetheless, this little recipe for a perfect side dish of french fries is nice paired with prime rib and tiny eaters have a great time munching on them as well. You’ll start this baby potatoes recipe off by slicing them into ¼ of an inch coins.

Heat together vegetable oil and extra virgin olive oil in a large skillet over a medium high heat. In a large mixing bowl, season the potatoes with dried herbs, salt, pepper, rosemary, garlic powder, and chili powder (if you want the fries slightly spicy).

Transfer potatoes to the skillet and cook on each side for 5 minutes, getting a nice crispy skin seared onto the edges of the coated potatoes.

Take them off the higher temperature and onto a cooling rack lined with paper towel. I’ve probably made this perfect side dish of a potato recipe a couple of times just last week for numerous special occasions- just imagine the pounds of potatoes- and they’re best served warm!

Side note: for smaller batches, you can soak the coins in water for 30 minutes, season and coat with avocado oil, tossing into an air fryer instead in a single layer for 5 minute intervals until heated and browned, turning each time. If they’re taking a long time to cook, just make sure they have plenty of space in the basket or move to a large baking sheet and finish baking in the oven at 350 degrees F until done.

Dill Baby Potato Salad

A great side dish at outdoor gatherings and one of my favorites of all the baby potatoes recipes we’ve mentioned, the dill baby potato salad is something quite special and gives the other side dishes at the barbecue competition.

Creamy potatoes like these always receive 5 star rating reviews on social media, and I can see why! Make this recipe card with fresh parsley, garlic cloves, mayonnaise, fresh dill, and sour cream from the grocery store.

Boil potatoes in a large pot with cold water for 20 minutes once boiling. Drain, cool potatoes in the fridge, then chop and take each cut side into a large bowl.

Mix with half cups of the mayo and sour cream, a tablespoon of parsley and dill, and lastly, salt and pepper.

Ingredients
  

  • 2 lbs baby potatoes
  • 2 tbsp olive oil
  • 2 cloves garlic
  • ¼ cup fresh chopped herbs such as thyme, sage or rosemary or you can combine all three
  • ½ tbsp salt
  • 1 tsp pepper

Instructions
 

  • Preheat oven to 350°F
  • Wash the potatoes and place in large pot on stove. Set to medium heat.
  • Let potatoes cook for 15 minutes and then remove from heat. Drain water from potatoes and place in baking dish.
  • Add olive oil, and coat thoroughly.
  • Bake in oven for 35 minutes.
  • Remove from oven and coat potatoes with fresh herbs, salt and pepper. Serve and enjoy!
