Toast the sugar. Heat the sugar in a medium-low heat saucepan until it turns golden brown. Stir frequently to prevent burning.
Add water and vanilla: Slowly add water and stir until fully dissolved. Add the vanilla bean pieces or vanilla extract.
Simmer: Let the syrup simmer for 2-3 minutes, then remove from heat.
Once cooled, set aside the syrup.
Making the Toasted Vanilla Shaken Espresso
Now that you've made the syrup, let's brew the espresso. Pull 2-3 shots of espresso using a Nespresso machine or espresso maker. If you don't have an espresso machine, strong cold brew or iced coffee can work as a substitute.
Fill a cocktail shaker or mason jar with ice cubes.
Add 2 tbsp of toasted vanilla syrup (adjust to taste).
Shake vigorously for 10-15 seconds until frothy and well-chilled.
Fill a tall glass with fresh ice and pour the shaken espresso mixture over the ice.
Add ½ cup of oat milk (or your choice of milk) and stir gently.

Notes
For a creamier texture, top with cold foam or sweet cream.
Adjust sweetness and milk ratio based on your preference.
Milk Options: While Starbucks uses oat milk, you can substitute almond milk, whole milk, skim milk, or coconut milk based on your preference.
Stronger Coffee Flavor? Add an extra shot of espresso or reduce the milk to ¼ cup for a bolder taste.
Make It Hot: Skip the ice and use steamed milk instead for a warm latte version.
