These creamy, delicious baby potatoes are crispy on the outside and creamy on the inside. Vegan and gluten-free.

- 2 lbs baby potatoes
- 2 tbsp olive oil
- 2 cloves garlic
- ¼ cup fresh chopped herbs such as thyme, sage or rosemary or you can combine all three
- ½ tbsp salt
- 1 tsp pepper
Preheat oven to 350°F
Wash the potatoes and place in large pot on stove. Set to medium heat. Let potatoes cook for 15 minutes and then remove from heat. Drain water from potatoes and place in baking dish. Add olive oil, and coat thoroughly.
Bake in oven for 35 minutes.
Remove from oven and coat potatoes with fresh herbs, salt and pepper. Serve and enjoy!
