I don’t know about you, but I love the fall 🍁 I don’t know about you, but I love the fall 🍁 and warm salads that are full of delicious nutrition. Enjoy this amazing salad anytime! Ingredients 1/2 cup green beans 1/4 cup broccoli 1/4 cup carrots 🥕 1/2 cup sprouts 1 cup mixed greens 1/4 cup English peas 1/2 avocado 2 tbsp green goddess salad dressing Mix salad greens and sprouts Steam veggies and mix in with salad greens Serves 1 Enjoy!
Vegan Shepard’s Pie 🌱 1 yellow onion 🧅 2 Vegan Shepard’s Pie 🌱 1 yellow onion 🧅 2 lbs baby yellow potatoes 🥔 1/2 tbsp parsley 🌿 1/2 tbsp Rosemary 1/2 tbsp thyme 1/2 tsp hot paprika 1 bunch carrots 🥕 1 cup peas 1 1/2 cups green lentils 2 cups veggie broth 1/2 cup red wine 🍷 Wash baby potatoes and set to medium heat in a medium saucepan for 20 minutes. Rinse lentils and set in medium saucepan on stove on medium heat for 20 minutes. Preheat oven to 375° F. Chop onions and garlic. Sauté onions until translucent. 3-5 minutes. Add in garlic and sauté for 2 minutes. Add in spices and veggie broth. Simmer and stir for 2-3 minutes. Add red wine, lentils and paprika. Simmer on low heat. Remove potatoes from saucepan and mash with a potato masher. Blend potatoes with immersion blender and place on top of lentil mixture. Place in oven for 20 minutes until potatoes are golden brown on top. Serve and enjoy! 😊
